A great winter congee recipe that can be modified many ways.
Ginger and Scallion Congee Recipe
6 cups chicken broth (water can be substituted)
1 cup white rice
3 slices (1/4 in thick) sliced ginger
3 scallions, halved crosswise and smashed with the flat side of a heavy knife
1 heaping tablespoon finely chopped scallion
Mineral salt to taste
Optional oil of your choice – 1 tablespoon. (olive, sesame, etc)
Place rice and broth in crock pot slow cooker. Cook on low for 6-8 hrs. Without slow cooker, bring to boil and simmer on low heat for 5-6 hours. In the last 30 minutes add sliced ginger and scallions. Salt to taste. Add optional oil. Garnish bowls with fresh, finely chopped scallions.
Serves 2.
Modifications
This basic congee recipe can be modified a thousand different ways with spices, herbs, meats, and vegetables. The above congee is excellent for kicking out an early stage cold with chills and neck-ache.
Breakfast Congee
Congee makes an excellent breakfast. Put in the slow cooker before you go to sleep, and you will have breakfast waiting for you hot and ready. In the morning you can make it heartier by adding leafy greens (bok choy, kale, chard, etc) and ground meat to cook for 10 minutes or add a raw egg yolk to cook for 1 minute.
Grains
Try using half white rice, half job's tears ( Yi Yi Ren ). Or half white rice, half millet.
Meats
Adding ground meat to a congee is a great way to turn it into a heartier meal. You can add ground meat such as ground chicken, beef, or lamb and allow to cook in the last 10 minutes before serving. You can also add ground meat, or thicker meat cuts at the beginning and allow it to slow cook.
Vegetables
Add leafy greens such bok choy, kale, chard and allow to cook in the last 10 minutes before serving.
Egg Drop
At the end of cooking, add 1-2 raw egg yolks to the hot congee and allow to cook for 60 seconds.
For fatigue – add jujube dates, Da Zao
For insomnia, anemia – add a small amount of fresh liver (chicken, beef, lamb) or ground beef
To improve fluid metabolism - add Yi Yi Ren, job's tears, and finely chopped bok choy
To increase warmth and circulation - add ground lamb, sweet cinnamon, fresh ginger
Sweet and savory - add ground black sesame seed, walnuts, goji berries.
